Culinary enjoyment in the Langhe
You can enjoy fantastic food everywhere in Italy, but Piedmont—and especially the Langhe—is among the country's true gastronomic gems. Here, everything revolves around tradition, local produce, seasonal ingredients, and simple dishes prepared with skill. The cuisine is rich in cheeses, game dishes, cured meats, homemade pasta, and, of course, the world-famous truffles. The Langhe is also the cradle of the Slow Food movement, which was founded in nearby Bra. Therefore, you'll experience not only delicious food here, but also conscious and authentic cuisine.
Piedmontese specialties – a cuisine full of character
Cheeses from the Langhe and surrounding area. Piedmont is known for an impressive variety of cheeses. These are primarily farmhouse cheeses, often made from raw milk and with centuries-old traditions.

Some regional highlights:
-
Toma Piemontese – soft, creamy cow's milk cheese, mild and versatile.
-
Robiola di Roccaverano – one of Italy's few DOP goat cheeses, made near the Borgo. Slightly acidic, fresh, and exceptionally aromatic.
-
Murazzano DOP – soft sheep's cheese from the Langhe, ideal for antipasti.
-
Castelmagno DOP – a robust mountain cheese with a soft, crumbly texture and deep flavor.
-
Bra Duro and Bra Tenero – cheeses ranging from mild to spicy and often used in Piedmontese cuisine.
-
Cheese plays a key role in antipasti, but also in filled pasta dishes, sauces, and as a finishing touch to a meal.
Meat Dishes & Game – Rich, Hearty, and Local
The Langhe hills are a paradise for lovers of meat and game specialties. Consider:
-
Cinghiale (wild boar) – often used in ragù for tajarin or agnolotti.
-
Fassona beef – a native Piedmontese breed, renowned for its tenderness. Essential in carne cruda (beef tartare) and battuta al coltello.
-
Coniglio (rabbit) – slowly braised with herbs and white wine.
-
Brasato al Barolo – beef stew in Barolo wine, an ode to the local grape.
-
Finanziera – a centuries-old dish of mixed meats and offal. Not for everyone, but a pure taste of the past.
-
You'll also find homemade cured meats everywhere, such as salame di Turgia, prosciutto crudo, lardo, and delicious coppa.
Appetizers (Antipasti)
-
Vitello tonnato – wafer-thin veal with tuna and caper sauce.
-
Carne cruda – Piedmontese beef tartare, hand-carved.
-
Peperoni con bagnetto – grilled peppers with garlic and anchovies.
-
Acciughe al verde – anchovies in a salsa verde made with parsley, garlic, and olive oil.
Primi – pastas and risottos

Agnolotti del plin – small filled pastas, often with meat or vegetables; served with sage butter or gravy.
-
Tajarin – wafer-thin egg pasta, delicious with game ragù, mushrooms, or – in autumn – white truffle.
-
Risotto – Piedmont is one of Italy's most important rice-producing regions, especially around Vercelli and between Alessandria and Turin.
-
Truffle pasta – essential in autumn: tajarin with white Alba truffle, or a simple pasta that lets the truffle shine.
-
Bagna cauda – warm dip of anchovies, garlic, and olive oil, served with raw vegetables. A social, age-old dish shared at the table.
Dolci – Sweet Temptations
With the hazelnut groves of the Langhe, it's no surprise that many desserts feature hazelnuts.
Favorites include:
-
Bunet – chocolate and amaretto pudding.
-
Zabaione – warm, airy cream of egg yolks and Marsala.
-
Panna Cotta – silky cream pudding, originally from Piedmont.
